Flour's Famous Banana Bread

Ingredients:
1 2/3 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup + 2 tablespoons sugar
2 eggs
1/2 cup oil
3 1/2 bananas, very ripe & mashed
2 tablespoons creme fraiche or sour cream
1 teaspoon vanilla extract
2/3 cup walnuts, toasted & chopped

Directions:
Preheat oven to 350 degrees.  Line the bottom of loaf pan with parchment paper.

Sift together the first four ingredients.
Whisk sugar and eggs with whisk until light and fluffy, five to ten minutes.
Drizzle in the oil.  Add mashed bananas, creme, and vanilla.
Fold in the dry ingredients and nuts.

Pour into the lined loaf pan and bake for 45 minutes to an hour.

Personal Comments:
- I've actually skipped the creme since I didn't have it on hand and the bread still turned out wonderfully!
- This recipe makes excellent muffins too.
- Greasing the pan with Crisco works equally as well as the parchment paper.
