Shrimp Mushroom Casserole (Cajun)

Recipe taken from Watt's Cookin Louie p154

1 chopped onion
1/2 finely chopped bell pepper
4 shallots, finely chopped
4 T butter
4 T flour
1 1/2 cup light cream
1/2 t celery salt
1/2 t white pepper
1/2 t paprika
1/2 t salt
pinch of cayenne pepper
1/4 lb mushrooms
2 lbs peeled, cooked shrimp ( I use raw shrimp. See note at bottom)
seasoned bread crumbs

variations: 6-7 chopped green onions instead of shallots & regular onion

Saute onion, pepper and shallots in butter over low heat. Add flour and mix well. Cook 3-4 minutes. Add rest of ingredients except bread crumbs.

Pour into well greased casserole dish. Sprinkle bread crumbs on top and bake about 20 minutes at 350 degrees.

***I don't pre-cook the shrimp because my thoughts are if it's going to cook for 20 minutes after adding to hot mixture....they'll be over done.

Recipe works well if you half the recipe.
