Ingredients
Pork Tenderloin (about 1lb)
Sliced Bacon
toothpicks
Salt and Pepper to taste
1/2 cup Lemon Dill Sauce
~Lemon Dill Sauce
3 tbsp. Mayo
2 tbsp. Dijon Mustard
2 tbsp. Lemon Juice
2 tsp. Snipped Fresh Dill Weed or 1/2 tsp. Dried Dill
Directions
1. Wrap the pork with bacon and secure with toothpicks. Season with salt and pepper. Place pork on baking sheet and top with 1 tbsp. lemon dill sauce
2. Bake 15-20 mins or until pork is 160 degrees (for medium). Top with remaining lemon dill sauce. Remove toothpicks and serve.
**Jack and I never have baked this in the oven. We grill it! It takes about 45 mins on the grill and we just top the pork, when it is cooked, with the lemon dill sauce. Make sure you spray the grill with pam otherwise the bacon will stick.
