Scallops with White Wine Sauce - all recipes.com

Ingredients

  • 1/2 cup chicken broth
  • 1/4 cup white wine
  • 1/2 lemon, juiced
  • 1 tablespoon minced shallot
  • 1 clove garlic, minced
  • 1/4 cup butter
  • 1 pound sea scallops
  • 1 tablespoon olive oil
  • salt and pepper to taste

Directions

  1. Preheat the oven broiler.
  2. In a skillet over medium heat, mix the chicken broth, wine, lemon juice, shallot, and garlic. Cook and stir until most of the liquid has been reduced. Stir in the butter until melted.
  3. Season the scallops with salt and pepper. Place into sauce and cook turning once till scallops are opaque.
  4. If serving with linguine, pull scallops out and stir in linguine. Plate linguine and place scallops on top. Drizzle wine sauce over scallops.

***This was amazing! Awesome flavor and way to easy! I had .9lb of scallops and Jack and I ate every bit of it. I did double the sauce and make sure you let it reduce to very little liquid before adding the butter. I served it with just a little linguine, a spinach salad with a warm bacon vinagerette, and some bread.
