1 to 2 lbs. squash sliced
1/2 c. sharp cheese
1 tsp. sugar
1/2 c. mayonnaise
3/4 c. onion chopped
1/4 c. bell pepper chopped
1 egg, slightly beaten
1/2 c. pimento
1 tsp. salt
Pepper to taste
1 stick butter melted ( 1/2 in squash & *1/2 for bread crumbs) I use only 1/2 stick butter
1/2 c. bread crumbs
Set aside 1/2 stick of butter and bread crumbs. Cook squash in small amount of water for about 5 minutes. You can also add your onion and bell pepper to cook with squash it you want it to be really tender. I usually heat onions and bell pepper in microwave for approx. 1 minute. Drain squash. Mix ingredients. Pour in greased dish. Top with bread crumbs. Drizzle butter over bread crumbs. *( I use I Can't Believe It's Not Butter spray) Bake at 350 degrees for about 25-30 minutes.
